Chunky monkey Granola

1 cup rolled oats
1 cup pecans
1 cup buckwheat grottoes
1 cup walnuts
2 tablespoon chia seeds
1 teaspoon cinnamon
1 teaspoon vanilla powder
1.4 teaspoon salt
¼ cup almond butter
1 large ripe banana, mashed (about ½ cup)
¼ cup coconut oil

1. preheat the oven to 180. line a large baking tray with baking paper
2. add all the ingredients to a large mixing bowl. using a wooden spoon, mix all ingredients until everything is nicely coated. scoop onto the prepared baking tray and roughly flatten out. you still want to leave a few large chunky pieces.
3. Place in the oven and cook for 20minutes, turning halfway. Once nicely browned, remove granola from the oven and allow to cook completely, this will make your clusters hold together.
